Mum's pancackes

A classic, fluffy, mouth-watering delight

Put 2 spoons of flour into lukewarm milk. Add sugar and yeast. Set aside until it moves (app. 15 minutes). Put the remaining flour into a bowl, add the remaining ingredients and the yeast mixture. Mix until smooth. The batter should be slightly thicker than that for pancakes. Set aside to rise for about 1 hour.
In the meantime peel the apples and grate them. Optionally chop into small pieces. Put the apples into the rested batter. Mix. Spoon the batter onto a frying pan with heated oil. Fry for app 3 minutes on each side. Be careful not to burn these delicious treats! Leave to rest for app. 1 minute. Serve sprinkled with icing sugar.

Ingredients (serves 4):
  • 2 large Reinette apples (or other sour apples, ex. Bramley apples)
  • 0.5 litre of milk 2 free range eggs
  • 0.5 kg flour 20g fresh yeast
  • pinch of salt pinch of sugar
  • oil for frying
  • icing sugar for serving.
